從馬鈴薯栽培與貯藏談-配醣生物鹼(Glycoalkaloids)及其影響因子

配醣生物鹼(glycoalkaloids)為植物之二次代謝物，也是一種天然植物抗菌素，主要存在於茄科植物中，具有殺蟲及殺菌活性，能幫助植物抵抗動物、昆蟲及真菌危害。雖然番茄、茄子等蔬菜作物都跟馬鈴薯一樣同屬於茄科植物，但在茄子及番茄中僅有微量配醣生物鹼，對人體無影響，而殘留在馬鈴薯中的配醣生物鹼則持續受到重視。
